Zingerone (4-(4-hydroxy-3-methoxyphenyl)-2-butanone, CAS: 122-48-5), also called vanillylacetone, is responsible responsible for ginger's pungent taste. Zingerone may be behind of antidiarrhoeal effect of ginger. Fresh ginger contains only gingerol, which subsequently transformed to zingerone by retro-aldol reaction.
